Stuffed round zucchinis

During the zucchini season, you can find them almost everywhere. On my recent visit to the farmer’s green market, I discovered the unusual round zucchinis.

They would just be perfect for my stuffed round zucchini recipe.

Ingredients:

  • Round zucchini
  • 500 ground beef
  • 1 onion diced
  • 2 cloves garlic chopped
  • 1 large tomato diced
  • Olive oil for frying

Instructions:

Remove the tails of the zucchini, and using a small spoon remove the flesh entirely. Chop and reserve the flesh for later use. Place the zucchinis in a large pot of boiling water for 10 minutes. Drain and set aside to cool to be quickly filled with the stuffing.

In the meantime, using a large pan, on medium heat, add the olive oil and saute the onion and garlic until translucent. Next, add the ground beef and saute for another 10 minutes. Finally, add the zucchini flesh and chopped tomato. Let it cook for another 30 minutes—season with salt, pepper, and thyme. When the meat mixture has cooked, stuff the round zucchinis, cover with tops and place in a preheated oven at 180C for another 15-20 minutes.

 

Serve hot with a slice of freshly baked bread.
