Red Velvet Cake

One of the perfect ways to celebrate love is to prepare a fancy red velvet cake. It is delicious, moist, fluffy, and soft. The buttermilk makes it taste like velvet, hence the name. 

 I often prepare it to surprise my husband on Valentine’s Day, but it is actually ideal for any occasion.

Ingredients:

  • 300 gr all-purpose flour
  • 2 tbsp cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 115 gr softened butter
  • 250 gr sugar
  • 2 eggs (room temperature)
  • 250 ml vegetable oil
  • 1 tsp white vinegar
  • 250 ml buttermilk
  • Red food coloring

Mascarpone Cream filling

  • 250 gr mascarpone cheese
  • 250 ml crème fraîche
  • 1 tsp vanilla extract
  • 50 gr sugar

Instructions:

In a medium bowl, mix the dry ingredients and set them aside. In a stand mixer, whisk the sugar and butter until fluffy, and add the eggs one by one.

Continue mixing and add the vegetable oil until you form a homogenous batter. Add the buttermilk to the batter and the red food coloring.

Slowly add the dry ingredients and mix until they are well incorporated.

Divide and pour the batter into two buttered pans, dimensions 20-22 and bake at 180C for 25 minutes.

When baked, set them aside to cool.

In a stand mixer, start by whisking the crème fraîche and add the sugar and mascarpone cheese with vanilla extract. Whisk together until fluffy for about 5 minutes.

Spread the cream filling on one of the cakes and place the other cake on top. You can use the cream filling to cover the whole cake. Decorate according to your preferences.
