Oven-baked spinach

This is an easy and delicious spring dish. I prefer to use fresh spinach whenever possible, but frozen spinach works as well too. 

 As my kids are not big fans of spinach, I often add dill and mint to balance the taste, but of course, this is optional. 

Ingredients:

  • 1.5 kg fresh spinach
  • 1 yellow onion diced
  • 2-3 cloves of garlic minced
  • ½ bunch dill
  • ½ bunch mint
  • 100 gr Arborio rice
  • Lemon zest
  • Olive oil
  • 3 eggs

Instructions:

Start by washing and cleaning the spinach leaves and place them in a large pot. Cover with water and let the spinach boil until softened. Drain and set aside. 

In the meantime, on medium heat in a large frying pan, sauté the onions and garlic, and add the drained spinach. Sauté the mixture for a while and add the chopped herbs and the lemon zest. Mix in the rice and add water just to cover. Season with salt and pepper according to taste.

Pour the mixture into small – individually sized baking dishes and make a well in the middle. Break an egg for each dish and place the baking dishes in the oven for 20 minutes.

Serve warm with sour cream and a slice of homemade bread.
