Osso Buco

Osso Buco is an excellent Italian dish that is perfect for your Sunday dinner. My butcher often mentions that I am one of his rare customers that loves veal shanks. What can I do? My family loves excellent and well-prepared food.  

This is a perfect recipe to surprise your loved ones with your cooking skills. Just follow my instructions:

Ingredients:

  • 4 large pieces of veal shank trimmed
  • Flour for dredging 
  • 3 tbsp olive oil 
  • 200 ml dry white wine
  • 2 l of beef stock
  • 1 yellow onion – half-moons
  • 1 sprig rosemary
  • 2 bay leafs
  • 2 sprigs thyme
  • Zest of 1 lemon
  • ½ bunch of parsley
  • 2 cloves of garlic

Instructions:

Season the veal shanks and dredge them in flour. Place a large Dutch oven on high heat and add the olive oil. Brown the veal shanks on both sides. Remove the shanks and set them aside. In the same pot, lower the heat to medium,  and add the onion cut on half-moons and caramelize. Place the veal shanks back into the pot and add the wine. Add the bay leaf, rosemary, and thyme.  Let the alcohol evaporate and add the beef stock, cover and let it cook for about two hours, 

Remove the shanks from the pot and set them on a serving plate. Pour the sauce through a sieve and serve it over the shanks. Garnish with chopped parsley, lemon zest, and minced garlic.

Serve with risotto Milanese.
