Orzo With Mussels

Often we are under pressure to cook fast weeknight dinners. My husband loves seafood, and so do my kids, so I usually create and prepare quick and delicious dishes. This is a perfect recipe for creamy orzo pasta with fresh mussels.  

Ingredients:

  • 500 gr orzo pasta
  • 500 gr fresh mussels
  • 100 ml white dry wine
  • 1 l vegetable stock
  • Pinch of saffron  
  • 1 yellow onion diced
  • 2-3 cloves garlic roughly chopped
  • Lemon zest 
  • Juice from ½ lemon
  • ½ bunch parsley
  • 50 gr grated Parmesan cheese
  • Olive oil

Instructions:

In a large saucepan, saute the onion on some olive oil until translucent and add the garlic. Add the orzo pasta and stir the mixture well. Continue by adding the vegetable stock until the orzo absorbs all the liquid and add the saffron. 

 In the meantime, using a medium skillet, saute the mussels on some olive oil, and add the white wine, lemon juice, and lemon zest. Add the mussels to the orzo, stir well and garnish with grated Parmesan cheese and parsley.
