Leek pie

It is complicated for me to decide whether I like spinach pie or leek pie. I simply love both pies.

But this leek pie is something that you should try. It is one of the most delicious pastries I have ever eaten, and it is fragrant, crunchy, and satisfying.

I used the phyllo dough that my mother got for me to make baklava, but I left the baklava for some other time.

For the most delicious leek pie, you will need the following ingredients…

Ingredients:

  • 1 kg leek sliced
  • 2 onions diced
  • 2 cloves garlic chopped
  • 6 stalks spring onions sliced
  • 1 egg
  • 200 gr Feta cheese
  • 1 bunch of dill chopped
  • ½ bunch of mint chopped
  • 120ml Olive oil
  • 500 gr phyllo dough sheets

Instructions:

Saute the leeks and onions until translucent, and add the garlic. Season with salt and pepper generously. Let the mixture cool a little before adding the spring onions, egg, and crumbled feta cheese (you can double the feta, we all love cheese, so I have doubled the quantity). Add the chopped herbs and mix well.

Grease well a large round baking sheet and start assembling the phyllo sheets. On each sheet, sprinkle olive oil. Use half of the sheets for the bottom part and spread the mixture filling evenly.

Continue with the rest of the phyllo sheets sprinkling each one with olive oil separately.

Cut the pie according to your preference and bake it in a convection oven at 160C for 75minutes or until golden brown.

Let the pie cool a little before serving.
