Fruit tart

Tarts are one of our favorite summer desserts, especially when we have all the fresh fruits in season. As part of the dessert table for my daughter’s birthday, I made this scrumptious fruit tart with pastry creme.

It was finger-licking good.

Ingredients:

  • Tart 
  • 6 egg yolks
  • 500 ml milk
  • 2 tsp vanilla extract
  • 60 gr butter
  • 4 tbsp cornstarch
  • 6 tbsp granulated sugar
  • Fruits of your choice
  • Mint leaves

Instructions:

In a medium saucepan, bring the milk to a simmer. In a separate bowl, place the egg yolks, cornstarch, and granulated sugar and whisk until pale white. Pour a small amount of the milk into the egg mixture and continue whisking until incorporated. Return the mixture into the milk saucepan, and continue whisking on medium heat until the pastry cream thickens. Pour into a clean bowl, add the butter, continue whisking until the butter melts. Place a cling film on top and let the pastry cream cool.   

To assemble the fruit tart, pour the pastry cream in the prepared tart (for the recipe, check my link) and place the fruits of your choice. Decorate with mint leaves. 

Let the tart cool in the refrigerator before serving.
