Asparagus Mimosa

Asparagus might be my favorite vegetable. I consider it a fancy vegetable, and as it is in season, and you can easily find it in the green market. It is healthy and quick to cook, and you can make a simple yet fancy salad adding hard-boiled eggs and vinaigrette sauce.

Ingredients:

  • 600 gr asparagus
  • 3 hard-boiled eggs 
  • 1 small onion 
  • 1 tsp dijon mustard
  • 50 ml olive oil
  • 2 tbsp wine vinegar

Instructions:

Peel the asparagus spears and place them in a pot of boiling water for 5-6 minutes until they soften, and immediately put them in ice-cold water to stop them from cooking further.

Use a blender to mix the onion, olive oil, vinegar, and dijon mustard.

Dice the hard-boiled eggs.

Place the dressing on a flat plate and place all the asparagus spears. Cover them with the diced eggs.

Voilà, there is your asparagus mimosa salad. 

Enjoy it with a glass of white wine.
