Ruby Chocolate Tart

RUBY CHOCOLATE TART

Love at first bite, the pure perfection of a dessert. This is the best explanation for this beauty.

We simply love ruby chocolate and its fruity flavor,  and if you are entertaining or simply want to surprise your loved ones, this tart is the perfect solution.  

I included a homemade raspberry and strawberry jam to accent the fruity flavor.

Ingredients:

  • Shortcrust pastry
  • 300 gr strawberries 
  • 300 gr raspberries
  • 100 gr sugar
  • 1 tbsp lemon juice 
  • 400 gr ruby chocolate
  • 400 ml whipping cream
  • 50 gr butter

Instructions:

Combine the strawberries, raspberries, and sugar in a medium saucepan, add the lemon juice and bring to a boil. Turn the heat down and slowly cook for about 30 minutes until the sugar dissolves and the jam thickens. Let the jam mixture cool and spread it evenly on the previously prepared shortcrust pastry.

Meanwhile, melt the ruby chocolate using a bain-marie method, and slowly add the whipping cream to combine. Finally, add the butter. Pour the chocolate mixture over the fruit jam and set it aside to cool down. Refrigerate for at least two hours before serving.

Decorate according to your preferences, with fresh or dried fruits or even flowers.
